As we approach the typical “back-to-school” time of the year, many of us may have on thing on our mind: kids’ lunches.
If you loved peanut butter and jelly sandwiches as a kid, you’re going to love this grown-up version in a glass. Using homemade peanut bourbon, this fun drink is extremely easy to make—requiring only three ingredients. The “jelly” consists of muddled strawberries combined with a dash of simple syrup and the peanut butter flavor comes from homemade peanut bourbon. And the result? A refreshing cocktail designed to taste like a childhood treat.
Inspired by the classic childhood sandwich, master mixologist Guy Jackson from the River House shares his recipe for the PB&J cocktail. (You’re sure to love it just as much as the original.)
Recipe:
Ice
2 oz. peanut bourbon
2 strawberries, muddled
1/2 oz. simple syrup
Directions:
1. Pour the ingredients into a cocktail shaker or mixing glass, add ice, and shake well.
2. Strain over a rocks glass with ice.
3. Add strawberry slice and whole peanut for garnish.
4. Enjoy!
To make peanut bourbon, you start with 1/2 lb. of de-shelled peanuts that are roasted over an open fire for about 20 minutes. (Be careful to heat them, not char them.) Next, add 1 liter of bourbon and the peanuts to a container that can be sealed. Let sit for 48 hours at room temperature away from sunlight. After 48 hours, the bourbon and peanuts can be separated and the bourbon is ready to serve.
